Ingredients:
-240 g natural peanut butter
-150 g salted peanuts
-160 g chocolate chips (vegan if you want it dairy free)
Method:
-In a large bowl, combine the peanut butter and salted peanuts together. I like the crunch of the peanuts so I leave them whole, but feel free to pulse them a few times before adding to the peanut butter for a smoother consistency.
-Start taking about 1 tsp at a time of the peanut butter mixture and placing it on a baking sheet lined with parchment paper. Keep forming your bites until you finish all the batter.
-Place the baking sheet in the freezer for 15-20 minutes until the bites are solid.
-Melt your chocolate chips in the microwave at 20 seconds intervals or under a bain-marie until fully melted.
-Coat your peanut butter bites in the chocolate and shake off the excess chocolate then place back on the baking sheet.
-Place the sheet back in the freezer for 10 minutes or in the refrigerator for 30 minutes, then enjoy right away 🙂
P.s: These tend to melt quickly so I would highly suggest to eat straight out of the fridge or leave it no longer than 5 minutes if you want a creamier consistency.
