Does cream cheese frosting go well with pineapple cake?

This  crushed pineapple cake is loaded with flavorful pineapple and topped with a decadent cream cheese frosting. It’s like having summer on a platter! Additionally, it’s quite simple to create with just a few basic ingredients.

Pineapples are not only one of the most delicious fruits, but they are also high in vitamin C and antioxidants.

So we can consider this smashed pineapple cake to be nutritious, right?

Maybe not after we cover it with cream cheese icing.

Let’s Make Crushed Pineapple Cake

This crushed pineapple cake is really easy to make. It’s a perfect choice when you have last minute guests or need to come up with a quick dish to take to a party.

To begin, preheat your oven to 325 degrees Fahrenheit.

Next, in a mixing basin, combine the dry ingredients: flour, sugar, baking soda, and salt.

After everything is evenly spread, add your eggs, crushed pineapple, and vanilla extract and stir thoroughly.

Since it was easier, I used canned pineapple for my cake. Also, pineapples aren’t in season right now. Nevertheless, if you can get your hands on some fresh pineapple, go ahead and use that instead!

If you go with fresh pineapple, just make sure that you cut out the hard center when you chop it. You’ll just have the readily crushable section of the pineapple this way.

When your crushed pineapple cake batter is ready, pour it into a 9″ by 13″ glass baking dish. Grease the dish so that the cake comes out easily when it’s done.

Bake the cake for 20 minutes, then cover it loosely with foil to prevent it from browning too much.

We’re aiming for a rich golden brown color, similar to banana bread.

Return the covered cake to the oven for 5 to 10 minutes, or until a toothpick inserted into the center comes out clean.

Let the crushed pineapple cake to cool before adding the final touch: the delectable cream cheese icing.

Making the Cream Cheese Frosting

You may prepare the cream cheese icing while the cake is baking to save time.

The frosting is made using just four ingredients: cream cheese, butter, powdered sugar, and vanilla extract.

Using an electric mixer, whip the softened cream cheese and butter until smooth and creamy.

Next add your powdered sugar and vanilla extract to thicken and flavor it.

After the cake has completely cooled, place dollops of cream cheese frosting on top and spread into a thick layer of icing.

  • 8 ounces cream cheese softened
  • 4 tablespoons butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla

Instructions

Cake:

  • Preheat the oven to 325 degrees Fahrenheit.
  • Combine the flour, sugar, baking soda, and salt in a mixing bowl.
  • Mix in the eggs, crushed pineapple, and vanilla extract.
  • Pour the cake batter into a 9×13 inch glass baking dish that has been buttered. Bake the cake for 20 minutes at 325 degrees Fahrenheit, then gently cover with foil to avoid overbrowning. Return to the oven for a further 5-10 minutes, or until a toothpick inserted into the middle of the cake comes out clean.
  • Let to cool fully before icing with homemade cream cheese frosting.

Cream Cheese Frosting:

  • Beat the butter and cream cheese with an electric mixer until smooth and creamy. Mix in the vanilla extract and powdered sugar well.

Notes

NOTE: While the cake bakes, it will get pretty dark. It should be a deep golden brown, similar to the color of baked banana bread.
