I discovered this magical stuff a few weeks ago and I tried to disregard the fact that thing existed because me and birthday cake anything are dangerous. For example, one of my favorite things on the planet is Blue Bell’s Krazy Kookie Dough ice cream. But, like everything else food-related, it never left my thoughts!! I kept wondering whether there was a way to replicate it at home. I’ll be visiting New York for the first time this summer, but I didn’t think I’d be able to wait that long. Frankly, I knew I couldn’t hold off for that long. (I know, #icantbelieveyouveeverbeenony thoughts, considering how much I love eating)
After doing some research on this “infamous” cream cheese, I figured out that it’s not gluten free, meaning they probably use cake mix in the cream cheese to get the flavor. Since everyone deserves a little BCCC, I set out to not only replicate the taste, but Additionally make it GLUTEN FREE. (- “Cream cheese birthday cake”) And by golly, I DID IT. This thing could be eaten with a spoon. I did, in fact, eat this with a spoon.
You’re probably wondering how I obtained the same taste without the cake mix…. almond extract. I’m a big fan of almond extract. It’s the secret ingredient in my grandmother’s sugar cookie frosting, and it’s the hidden ingredient in most wedding cakes. I also sprinkled some powdered sugar on top for extra sweetness. It tasted like cream cheese with sprinkles without the powdered sugar. I’d say the powdered sugar is just as, if not more important than the almond extract.
So there are your four ingredients: Almond extract, powdered sugar, and sprinkles with cream cheese.
This cream cheese is really tasty and flavorful – it goes well with almost any bagel flavor (much like cake goes well with almost any frosting!): chocolate chip, cinnamon crunch, blueberry, french toast, anything!
So go prepare this as soon as possible and spread it over everything… toast, English muffins, waffles, or bagels.

1 (8 oz.) container room temperature cream cheese
1/2 cup powdered sugar
2 teaspoons almond extract
2-3 Tablespoons rainbow sprinkles
Directions:
In a medium bowl, fold the cream cheese, powdered sugar, and almond extract together with a rubber spatula, until combined. Mix in the rainbow sprinkles. Serve immediately or refrigerate for up to 3 days in an airtight jar.
