How to make an easy sponge cake?

Ingredients

  • 225g softened butter
  • 225g golden caster sugar
  • 4 large eggs
  • ½ lemon, zested
  • 1 tsp vanilla extract
  • 225g self-raising flour
  • splash of milk
  • Lemon curd, jam, and softly whipped cream are optional fillings.
  • icing sugar for dusting

Method

  • STEP 1Preheat the oven to 180°C/160°C fan/gas 4 and butter and line two 20cm spring-form cake pans with baking paper.
  • STEP 2Using an electric whisk Combine the butter and sugar till pale and creamy. Whisk in the eggs one at a time, scraping down the sides of the basin after each addition. Combine the lemon zest, vanilla, flour, milk, and a bit of salt in a mixing bowl. Whisk until just combined then divide the mixture between the two tins.
  • STEP 3Bake for 25-30 minutes, or until a skewer inserted into the center of each cake comes out clean. After 10 minutes, take the cakes from the pans and place them on a wire rack to cool fully. Fill up the blanks as you see fit. My personal favorite is a generous dollop of lemon curd topped with fresh cream and dusted with icing sugar. It will keep for three days.

According paraphrase Mrs Beeton, a Victorian cooking writer, “genuine sponges contain no fat,” merely eggs (which do include some fat) and sugar whisked to an emulsion with some flour gently mixed in so as not to damage the mixture’s bubble structure.
